Ingredients:
- 300g penne pasta
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 200g chorizo, sliced
- 400g canned chopped tomatoes
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
- 200g fresh mozzarella, diced
- Fresh basil leaves, for garnish
Instructions:
Cook penne pasta according to package instructions until al dente
Drain and set aside
In a large skillet, heat olive oil over medium heat
Add minced garlic and chopped onion
Saut until softened, about 2-3 minutes
Add sliced chorizo to the skillet and cook until lightly browned, about 5 minutes
Stir in canned chopped tomatoes, dried oregano, and red pepper flakes
Season with salt and pepper to taste
Simmer for 10 minutes
Add cooked penne pasta to the skillet and toss until well coated with the sauce
Sprinkle diced mozzarella over the pasta and cover the skillet
Let it sit for a few minutes until the cheese melts
Garnish with fresh basil leaves before serving
Serve hot and enjoy!
