Ingredients:
- 2 cups elbow macaroni
- 1 cup Greek yogurt
- 2 cups shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 cup bread crumbs optional, for topping
Instructions:
Follow the directions on the package to cook the elbow macaroni
Remove the water and set it aside
While the butter is on medium heat in a large saucepan, it should melt
Add the all-purpose flour and stir it in
Cook for one to two minutes, until it starts to turn a light golden brown color
Add the milk slowly while whisking to avoid lumps
Stir and cook the mixture some more until it gets thick
Now turn the heat down to low and add the paprika, garlic powder, onion powder, Greek yogurt, cheddar cheese, and Parmesan cheese
Mix the sauce and cheese together until the sauce is smooth and creamy
Mix the cooked macaroni with the cheese sauce after adding it
Add two to three more minutes of cooking to heat everything through
For a crunchy top, you can add bread crumbs if you want to
