Ingredients:
- 4 fresh eggs from your backyard hens
- 2 tablespoons butter
- Salt and pepper to taste
- Chopped fresh herbs optional
Instructions:
Gather 4 fresh eggs from your backyard hens
Crack the eggs into a bowl and beat them gently with a fork or whisk until the yolks and whites are well combined
Heat a non-stick skillet over medium-low heat and add 2 tablespoons of butter
Allow it to melt and coat the pan evenly
Pour the beaten eggs into the skillet, spreading them out to cover the bottom evenly
Season the eggs with a pinch of salt and a dash of pepper to taste
Let the eggs cook undisturbed for about 2-3 minutes or until the edges start to set
Gently stir the eggs with a spatula, pushing them from the edges toward the center
Continue to cook, stirring occasionally, until they reach your desired level of doneness usually about 2-3 more minutes for soft scrambled eggs
If desired, sprinkle chopped fresh herbs like chives, parsley, or dill over the eggs just before serving
Plate the scrambled eggs and serve them hot for a delightful backyard hen-inspired breakfast!
