Vegan Orange Peanut Tofu Satay Noodle Salad



There are a lot of different tastes and textures in this vegan orange peanut tofu sate noodle salad. The fresh vegetables and crispy tofu go really well with the creamy peanut satay sauce. It's a full-flavored vegan salad that you can eat for lunch or dinner.

Ingredients:

  • 8 oz rice noodles
  • 1 block of extra-firm tofu, pressed and cubed
  • 1/2 cup peanut butter
  • 1/4 cup orange juice
  • 2 tbsp soy sauce
  • 2 tbsp maple syrup
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1/2 tsp red pepper flakes
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cucumber, thinly sliced
  • 4 green onions, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup roasted peanuts, chopped
  • Sesame seeds for garnish
  • Lime wedges for serving

Instructions:

Cook the rice noodles according to package instructions

Drain and rinse with cold water

Set aside

In a blender, combine peanut butter, orange juice, soy sauce, maple syrup, minced garlic, minced ginger, and red pepper flakes

Blend until smooth to make the satay sauce

Heat a skillet over medium heat and add a bit of oil

Add the tofu cubes and cook until they are crispy and golden brown on all sides

In a large bowl, combine the cooked rice noodles, sliced red bell pepper, julienned carrot, sliced cucumber, chopped green onions, and fresh cilantro

Pour the satay sauce over the noodle and vegetable mixture

Toss to combine and coat everything evenly

Top the salad with the crispy tofu cubes and chopped roasted peanuts

Garnish with sesame seeds and serve with lime wedges
