Ingredients:
- 1 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 tsp instant coffee granules
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup white chocolate chips
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a small bowl, whisk together the flour, cocoa powder, instant coffee granules, baking soda, and salt
In a larger bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy
Beat in the egg and vanilla extract until well combined
Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined
Fold in the semi-sweet chocolate chips and white chocolate chips
Scoop spoonfuls of cookie dough onto the prepared baking sheet, spacing them a couple of inches apart
Bake in the preheated oven for 10-12 minutes, or until the edges are set
Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
